Easy Tom Kha Soup (Thai Coconut Soup)

An easy, dairy-free, lightened up version of thai coconut soup made with coconut milk, ginger, spices and veggies. Perfect vegetarian weeknight dinner idea!

• Picar 3 rebanadas de pan de masa fermentada en cubos. Pon 3 cucharadas de aceite de oliva en la sartén y calienta. Coloca los champiñones encima, asa un poco y luego agrega el pan. Después de tostar pan y champiñones durante 1-2 minutos, triture los 2 dientes de ajo restantes y agréguelos a la sartén.
